Kid Friendly Vegan Veggirama Gnocchi with Basil Pesto

“Me, me, me! More please!”

This excited string of words coming from family members at mealtimes, brings unexplainable delight to a mom’s heart the whole world over! 

After all the love and thought we’ve poured into the meal, we can now revel contentedly as we watch them happily devouring all that yummy, healthy goodness. (Disclaimer: If your kids are anything like my preschoolers, you want to really savor this moment before the next battle of “fussy-eating” shows up! 😉 )

This Vegan Veggirama Gnocchi with Kid (and allergy-friendly) Basil Pesto is one of our family favorites.  A delish, lightened-up, hearty meal that’s sure to make your family’s tummies sing!

Without fail, our kids eat it up in record time, and always beg for more. Who would’ve thought that a bunch of little potato dough balls could bring such joy?! 

If you have the time, I highly recommend this super simple, awesome gnocchi recipe recently published by Elena. You’ll get hooked on the amazing taste of homemade gnocchi, and your extra bit of effort will be well rewarded, I promise you. The gnocchi can be prepared ahead of time and frozen for when you’re ready to use it, making it a quick meal to whip up.

The morish veggirama sauce can easily be turned into a “veggie-smuggler” version for kids who are fussy-eaters. Simply puree the sauce once it’s cooked, and stir through the gnocchi to serve.

The accompanying kid and allergy-friendly pesto is guaranteed to make your taste buds hop with delight. It is thick, creamy, zesty and subtle enough to tempt even the fussiest basil and garlic “non-lovers”.

Ingredients
  • Gnocchi
  • 500 g (17 oz.) packet gnocchi, cooked according to instructions OR [url href="https://www.vega-licious.com/easy-vegan-gnocchi-recipe-4-ways/"]Vegalicious gnocchi[/url]
  • Veggirama Sauce
  • 1 medium brown onion, diced (~1 cup)
  • 1 large carrot, finely chopped, spiralled or grated (~ 1 cup)
  • 1 large zucchini, finely chopped, spiralled or grated (~1 cup)
  • 1/2 small eggplant, finely chopped (~1 cup)
  • 1 teaspoon olive oil (optional, or use few tablespoons water instead)
  • 2-3 teaspoons vegetable stock powder of choice (or to taste)
  • 1 x 400 g (14 oz.) can lentils or 1 1/4 cups cooked brown lentils
  • 1 x 400 g (14 oz.) can 100% diced tomatoes
  • 3 tablespoons tomato paste
  • 1/4 cup water
  • Kid & Allergy-Friendly Basil Pesto
  • 1/2 cup fresh basil (stems and leaves), tightly packed
  • 1 cup raw sunflower seeds or pumpkin kernels
  • 1 small clove fresh garlic, chopped
  • 1/8 - 1/4 teaspoon vegetable stock powder or Himalayan rock salt, to taste
  • 1/3 cup lemon juice, freshly squeezed (~ 2 lemons)
  • Garnish
  • Optional: dried basil and/or pine nuts.
Instructions
  1. Prepare gnocchi according to packet or [url href="https://www.vega-licious.com/easy-vegan-gnocchi-recipe-4-ways/"]Vegalicious gnocchi instructions[/url]
  2. Combine the onion, carrot, zucchini, eggplant, oil/water and vegetable stock powder in a pan with a lid and mix well. Turn onto medium-high heat and cook until nearly soft (approximately 10 minutes). Remember to stir frequently and replace the lid when not stirring.
  3. Stir in lentils, tin tomatoes, tomato paste and water and let cook for a further 5 minutes or until vegetables are cooked through. Once done, turn off heat and leave lid on top till ready to serve.
  4. Pesto: Put all ingredients into a mini food processor (or use stick blender and a tall jug), and whizz until very smooth.
  5. Serve: Dish up individual serves of gnocchi with sauce on top or stirred through. Top with a generous dollop of pesto and sprinkle with dried basil and/or pine nuts.
Notes
Leave gnocchi in the pot with hot water until ready to serve.[br]Puree the sauce once cooked for a “veggie-smuggler” version for fussy eaters.
